A day late, but here’s the Ellie recipe for the week! It’s Black Bean Mexican Style Pizzas which was hosted by Apple Crumbles.

I have had such a Mexican food craving lately (and actually resorted to Taco Bell this past weekend because I was too lazy to make these!) so this recipe came at a good time for me.

It was very easy. I love meatless meals because there’s no thinking ahead to do. No meat to defrost, no marinating, etc. All you had to do for this recipe was puree some beans and chop up your veggies! Easy peasy.

The black bean dip was delicious! I doubled the recipe and I’m thinking I’ll pick up a bag of tortilla chips to finish off what’s left. The pizzas themselves weren’t anything special. If you can’t tell from my picture, the dip got a little… funky in the oven. It got dry and cracked looking and just not pretty. Ten minutes was also too much for my tortillas and my first batch was completely burnt! The dip made it all worth it. Seriously, if you’re ever in need of a quick appetizer, this black bean dip would be PERFECT.

    I thought ten minutes was too long as well and agree the dip didn’t look too great, but it sure tasted good! Glad you enjoyed it :)
